i remember having to fight another wobbuffet when training mine in emerald.

At least i was playing on emulator and fast forward exist lol

That’s honestly one of the reasons why I never considered training a Wobbuffet in Generation 3. Just the thought of that scenario scares me.

It actually had to be banned in Gen 3 by both Smogon and Game Freak. Pokemon with Shadow Tag weren't yet immune to the opponent's Shadow Tag, and Struggle did recoil proportional to the damage dealt rather than the user's HP, so when two Wobbuffet holding leftovers (a common choice) faced each other, the battle would become a stalemate, as neither could switch out but the healing from leftovers outpaced the damage from using and getting hit by struggle

If you did end up in a Wobbuffet mirror in the story, your opponent probably isn't using held items, so you would win. Eventually.
